Healthy Dinner Recipe | Cinco de Mayo

Over fifteen years ago I found the perfect gift for Matt...ok maybe he found it but I bought it for him. It was a cookbook called A Man, A Can and a Plan. It has easy, healthy recipes that we both like and have enjoyed since. The following year I bought him A Man, A Can and a Microwave and then A Man, A Can and a Grill. The eclipse in the books haven't gotten old and surprisingly we still have recipes we haven't tried...like this one that Matt made tonight...



Rather than cooking it outside, Matt used the griddle and cooked them inside. For the girls he made cheese Quessidillas...although Courtney preferred the ones with beans. 


To make his plate look "fancy" Matt added a bowl of salsa, spoonful of low fat sour cream and a chip in his beans. We chose not to use Jalapeños or hot pepper sauce. If cooked for himself Matt would have included those ingredients but the girls and I were not interested in them!!

A side portion of rice completed the meal! Everyone loved it and I also recommended the quesadillas as a great snack for tailgating or basketball season!!

Shakeology No Bake Cookies

Over the weekend, I made Shakeology No Bake Cookies (or balls). I prefer to make these as balls rather than flattening them as cookies.  I've made them with both Chocolate and Vanilla Shakeology and both are good.  Using the Vanilla Shakeology actually creates Peanut Butter Balls...you don't really notice the vanilla...it just mixes in.  My girls and husband prefer the Peanut Butter Balls, but when I am craving chocolate...this is a great option!  The girls love helping with this recipe and it's super easy! Almond Joy candy vs. wonder whip

As Halloween approaches, candy options are more and more tempting.  Ok, maybe candy is tempting all year around!!  You want to think those little pieces of chocolate won't affect your weight goals, but they can.  Especially when it's hard to just eat one or two.  Personally, I would much rather have several bites of dessert than just one, so these wonder whip solutions are an amazing alternative to a few pieces of candy!!
