Family friendly meal - pizza casserole

Growing up this was one of my favorite meals and it is now one my my girls and husband’s favorites too. It’s so simple and while not completely clean eating, it is a healthy family friendly dinner choice!   First preheat the oven to 425 or the temp instructed on the pizza crust package. Then cook a pound of meat on the stove and add in some frozen chopped onions and then abou 1/2 a cup of pizza sauce. Spray a casserole dish and then line it with pizza crust, I used the Kroger brand.  Pour the meat over the crust and add your favorite topping. I put only turkey pepperoni on one side for Caroline. Courtney likes olives so I covered half with them and also added mushroom pieces to Matt and my side.  Cook the casserole for all but 4 minutes of the time on the crust instructions. Then add cheese and cook the remaining 4 minutes or until the cheese is melted and crust has a few brown spots.  Serve a portion with salad or fruit and enjoy!

Egg Casserole

Several people asked for the egg casserole recipes that I made for my pre-workout meal this week. As I started timed nutrition I needed a veggie, protein, starch and teaspoon to meet all the container requirements. The egg casserole is a light dish that contains all of those. Ingredients: Veggie: 1 chopped green bell pepper and 1 red bell pepper Protein: 10 eggs Starch: 4 yellow containers of Sliced potatoes/hash browns Teaspoon: Olive oil or cooking spray Directions: Preheat oven to 375 degree. Crack and mix 10 eggs. Add chopped peppers and potatoes and stir. Spray or spread olive oil around a glass casserole dish. Pour in mixture. Cook for 20-30 minutes. Let cool and then cut into 6 pieces.

Kid Friendly Pizza Casserole

This is one of my family's favorite dishes and one I've loved for years too!! It was actually taken from the Weight Waters 5 Ingredient 15 Minute Cookbook but I made a few adjustments and added some extra ingredients....to part of the dish.  On the right I added pepperoni and olives, in the middle only olives and on the left neither were added.  This was based on kid vs adult preference. Personally I had middle pieces so I had less crust.  This is low fat, low calorie meal that everyone enjoyed!!  For 21 Day Fixers, I counted this as a Yellow, Red, and Blue.  The kids had applesauce on the side while the adults had a salad. Ingredients 1 pound ground round meat or turkey 15 oz can chunky Italian-style tomato sauce 10 oz can refrigerated pizza crust dough 1 1/2 cups (6 oz) pre-shredded mozzarella or Mexican cheese Olives Pepperoni's Cooking spray or Coconut oil Cooking Directions Preheat over 425 degrees Cook meat in a nonstick skillet over me...
