Instant Pot Chili Mac

This is one of our favorite winter recipes.  I used to make it in the crock pot but now that I have the Instant Pot, it can be made in 45 minutes.  Plus I can wash dishes while it's cooking!! Ingredients: 2 Tablespoons Olive Oil 1/2 cup frozen onion 1 pound thawed ground beef or turkey meat 1 tablespoon chili powder 1/2 teaspoon garlic cloves 14 oz diced tomato Italian Style 8 ox tomato sauce 14 ox Red Kidney Bean Noodles (optional) Make sure the pot is completely in the instant pot. Press Brown/Saute. Put in olive oil, onions and meat. Cook, stir occasionally until brown. Add other ingredients Switch Instant Pot setting to Beans/Chili and set for 5 minutes Close lid and be sure valve is locked. Press Start Instant Post will heat and then cook. When finished, wear an oven mitt and use a kitchen utensil to unlock valve and release steam.

Carrot Cake Smoothie

This Carrot Cake Smoothie recipe has all the flavors of a beloved carrot cake, without all the unnecessary fats and sugars. 1 cup unsweetened almond milk 1 cup ice 1 scoop  Vanilla Shakeology 1 medium carrot cut into chunks ½ cup crushed pineapple in juice 2 Tbsp. chopped raw walnuts ½ tsp. ground cinnamon Place almond milk, ice, Shakeology, carrot, pineapple, walnuts, and cinnamon in blender; cover. Blend until smooth. Enjoy!!

It was a crazy week, but totally worth it!

Week 7 is complete and I’m exhausted but it’s not just from the workouts. My schedule was crazy busy this week with video filming for work, dance competition with Courtney, Lil Lambs consignment sale and waking up early daily to work out. Was being in the consignment sale worth it? Well I sold over 50 items and made $188. Yes, it took me 4-5 hours to organizing, price and tag the items and I volunteered for 3 hours so it took about 10 hours total of my time. However, I would have spent the same or more time having a yard sale and probably would have made $20, so in my opinion, it WAS worth it!! Was the dance competition worth it? Driving back and forth to Louisville was hectic Friday Courtney had to leave school early and I only worked 2 hours. She competed with her trio at 3pm and they received a gold rating. They did a fabulous job and were so excited with their performance and to watch their friends. We had dinner with other dance friends before returning home to Lexington.
