Kid Friendly Pizza Casserole

This is one of my family's favorite dishes and one I've loved for years too!! It was actually taken from the Weight Waters 5 Ingredient 15 Minute Cookbook but I made a few adjustments and added some extra ingredients....to part of the dish.  On the right I added pepperoni and olives, in the middle only olives and on the left neither were added.  This was based on kid vs adult preference. Personally I had middle pieces so I had less crust.  This is low fat, low calorie meal that everyone enjoyed!!  For 21 Day Fixers, I counted this as a Yellow, Red, and Blue.  The kids had applesauce on the side while the adults had a salad. Ingredients 1 pound ground round meat or turkey 15 oz can chunky Italian-style tomato sauce 10 oz can refrigerated pizza crust dough 1 1/2 cups (6 oz) pre-shredded mozzarella or Mexican cheese Olives Pepperoni's Cooking spray or Coconut oil Cooking Directions Preheat over 425 degrees Cook meat in a nonstick skillet over medium-heat hi

No Excuse....Got Things Done Today!

It's been a productive day!!  From my morning workout to Kroger...I didn't use the rain as an excuse to slow me down!! Instead I used it as a motivator to get things done! I listened to The 10X Rule and it got me fired up and inspired to not set back and waste the day!! Instead I moved things forward and challenged myself to overcome fears and learn new things.. The online training with my coach, Melanie, provided encouragement and tips for my New Coach Mentorship starting June 5. I have 2 friends ready to start and share their fitness journey and I will guide them to not only complete their program and take their fitness to the next level but also show them how to grow a fitness business by guiding others!!  Around the house I did more spring cleaning and moved the Barbie house out of my office and upstairs to Caroline's current room. AND I applied for a few jobs before a yummy stir fry and wine dinner! #happynationalwineday Now I'm putting the fin

Cut the Crap, but keep Pasta, Wine and Shakes!!!

Each morning I take a similar picture with this cup in my hand. Other than the fact that it's quick and easy to make and tastes delicious...why do I drink a shake each day?!? In the beginning, I drank it because my coach told me to include it in my meal plan as I started the online accountability group and workout program.  While I wanted to lose 10 pounds, I knew I wouldn't lose weight just because I drank the shake.  I knew I'd need to eat healthy and exercise too. And I didn't start drinking it just for the protein...there are plenty of protein powders available with way more protein packed in.  I researched other shakes and found Shakeology had less protein than other options but the others didn't compare when it came to the vitamins and nutrients. And that's what I really wanted!! I didn't want to have to take a multivitamin pill anymore. Plus I needed it to make my digestive system run smoothly and regularly!! As a nutrient dense, meal

New Beginning When Least Expected...

Shocked....I didn't know what to say.  After returning from a vacation where the sun was only out the 1st day, the clouds had followed me home and I was stunned, but not totally surprised. I had taken the morning to get caught up at home, then taught a cardio, dance fitness class before going into the office to review emails and attend a team meeting. However, just minutes after the meeting started, I was asked to follow my manager into another office. I was told with the department's reorganization, my position duties were restructured and my position was being eliminated. I nodded and smiled.  More lo gistics were provided and then I walked to my desk to gather some of my personal belongings.  Tons of thoughts ran through my head but I didn't cry and I actually wasn't that sad.  I actually felt more relief than anything!  I felt like a weight had been pulled from my shoulders and I was FREE!! I've worked at the University of Kentucky for 12 years and always l
