How to make 21 Day Fix Approved Peanut Butter Square Snacks


Who's ready for a tasty, rich snack?  

This recipe is from the FIXATE cookbook written by Autumn Calabrese, the creator of the 21 Day Fix and the 21 Day Fix Extreme workout programs.
These programs include a portion controlled clean eating meal plan which is included within the nutrition guide that is included in the Challenge Pack. The nutrition guide also contains some other great recipe combos that won’t leave you missing old comfort foods!

INGREDIENTS:
1 1/2 cups all natural smooth peanut butter
1/2 cup raw honey (or pure maple syrup)
2 tsp pure vanilla extract
2 large eggs (at room temperature)
1/2 tsp baking soda, gluten free
PREPARATION DETAILS:
1. Preheat oven to 350F
2. Lightly coat 8×8-inch baking pan with spray. Set aside
3. Combine peanut butter, honey, extract, eggs, and baking soda in a large bowl; mix well
4. Evenly spread batter into prepared pan. Smooth top with a spatula.
5. Bake 20 to 23 minutes. Squares may be a little soft when coming out of the oven, but they will continue to cook.
6. Cool. Cut into squares.
Makes 16 servings, Each serving is 1 YELLOW and 2.5 TSP

Shakeology No Bake Cookies

Over the weekend, I made Shakeology No Bake Cookies (or balls). I prefer to make these as balls rather than flattening them as cookies.  I've made them with both Chocolate and Vanilla Shakeology and both are good.  Using the Vanilla Shakeology actually creates Peanut Butter Balls...you don't really notice the vanilla...it just mixes in.  My girls and husband prefer the Peanut Butter Balls, but when I am craving chocolate...this is a great option!  The girls love helping with this recipe and it's super easy! Almond Joy candy vs. wonder whip
