This is a great summer recipe and was enjoyed by our entire family...including my 8 year old and 3 year old daughters!! It's a recipe adjusted slightly from the cookbook, A Man, A Can and A Grill. I gave my husband this cookbook 12 years ago when we were dating and we still use it regularly!!
Ingredients:
6 boneless, skinless chicken breast halves
15 oz can mandarin oranges in light syrup, drained
14 oz can diced tomatoes Italian style
8 oz can pineapple chunks in juice, drained
8 oz can Italian-style tomato sauce
1 tsp chili powder
1/2 cup chopped red bell pepper
How to Make it:
Mix the tomato sauce and chili powder in a big zip lock bag. Drop in the chicken. Seal the bag and refrigerate for a few hours or overnight. In a big bowl, mix the oranges, tomatoes, pineapple and pepper. Let it sit for 30 minutes. Fire up your grill to medium. Once grill is ready, debag the chicken and grill, turning and basting with marinade a few times for about 10 minutes or until the center is no longer pink and the juices run clear (about 160 degree F on an instant-read thermometer). Dump the orange pineapple mix on top.
Makes 6 servings.
Approx per serving: 244 calories, 2 g fat, 1 g saturated fat, 36 g protein, 19 g carbs, 2 g fiber, 550 mg sodium.
