Crock Post Instant: Hawaiian BBQ Chicken

This afternoon it hit me like a ton of bricks...we didn't pull out chicken to thaw for dinner.  I was anxious but only for a second as I quickly realized it wasn't a big deal after all!! I received a Crock Pot Instant for Christmas, so I googled chicken recipes and found a good looking one for Hawaiian BBQ Chicken.

There are only four ingredients and I already had them in the pantry.

  • 14 oz can diced pineapple
  • ¼ tsp. Salt
  • ¾ c. your favorite BBQ sauce 
  • 2 lb chicken breasts (frozen)

I placed the chicken breast into the pan, poured the pineapple with juice and then added the BBQ sauce.  Honestly I forgot to put in the salt but I will add it next time. 

I press START and then POULTRY and set the timer for 20 minutes since the chicken was frozen.  The pot showed HEAT as it was heating and this typically takes 10 minutes.  With dinner cooking, I took Courtney's friend home and picked up Caroline from her friends house.  

When we got home the crock post instant showed it had three minutes remaining.  Perfect timing!!

Once the timer went off, I had on my oven mitts and used a kitchen tool to move the valve to open for the pressure to release.  This finished quickly but I was finishing dishes and Courtney was in the shower, so I left the meal on the WARMING function and prepared broccoli and rice for side items. 

Once everyone was ready, I put the meals on the plate and we at dinner in the dining room with no complaints, nagging or begging to eat. 

In total, it took 40 minutes to prepare.  From getting out the ingredients to putting them in the pot, letting the pot heat for 10 minutes and then cooking for 20 minutes and letting the pressure release for 5 minutes. 

The meal was a success!! Everyone loved it!! Matt said the chicken was moist and I agreed.  Courtney ate a good sized portion and Caroline asked for seconds.  

This is a winner and kid approved!!
